Banana Chocolate Chip Muffins

Okay! Here's the recipe from Suzan's Bakery Delights. :) (cute, no?)

Banana Chocolate Chip Muffins

3 large bananas, mashed
3/4 cup sugar
1 egg
1 tspn baking powder
1 tspn baking soda
1/2 tspn salt
1 1/2 cups flour
1/4 cup melted butter
1 cup chocolate chips


Add sugar and slightly beaten egg to mashed bananas. Add melted butter. Stir in dry ingredients and chocolate chips. Bake at 375 degrees for 20 minutes. Best served warm.

Now, this version ABOVE is the "original" version but this is NOT the version that I tried this morning. Suzan did some changing of the recipe because her daughter is allergic to anything dairy (I know!). So, the version BELOW is the one I had this morning, however, Suzan informed me that it wasn't necessary to use Soy Butter and Egg Substitute in it, just use butter and real eggs. :)

Maya Friendly Version:

3 large bananas, mashed
1/4 cup + 2 TBSPN
Splenda
Egg substitute (EnerG) equivalent to 1 egg
1 tspn baking powder
1 tspn baking soda
1/2 tspn salt
1 1/2 cups of
whole wheat flour
1/4 cup of soy butter
1/2 cup chocolate chips

The bold is the differences in the original recipe. Don't go out of your way to specifically buy soy butter or the egg replacer...Suzan had to use it to avoid allergic reactions for her daughter's food allergies.

Thank you Suzan for the loverly muffins this morning. There's still one remaining and I'm going to save it for later. :) (no seriously, i am. it's mine. and don't you even think about stealing it! or you'll get a big ol' smack!)
